100% homemade pasta in red sauce (without eggs)
Today I am sharing with you a recipe that my toddler loves a lot. It's an eggless recipe and you don't even need a pasta maker. 😜
1/2 cup semolina /rava/sooji
1/2 tsp oil
A pinch of salt
Water
For sauce:
3 medium tomatoes
1 medium onion, finely chopped
3-4 garlic cloves chopped
Herbs like oregano, basil
Red chilli powder ( you can skip this if making for a toddler)
Butter/ghee
Oil
Salt
Water
2. Add very little water and knead. Again add water and knead well to get a soft dough.
3. Cover the dough with a polythene bag for an hour.
4. Again knead it well. On a chakla sprinkle sufficient flour, roll the dough out. Fold it again roll it. Do this 5-6 times. Roll it to get a thin sheet or chapati.
5. Cut it into strips or other desired shapes with knife.
6. In a pan, boil sufficient water. Add a pinch of salt and very little oil.
7. Add pasta to the boiling water. Cook for a few min. Max 5 min.
8. Drain the extra water. Keet it aside.
For red sauce
1. Blanch the tomatoes by boiling them in water for 5 min. Remove the skin and blend them.
2. In a pan, heat homemade butter/ghee and oil.
3. Add chopped garlic, onion. Saute. Add tomato puree, herbs, salt. Cook for 5 min till puree thicken.
4. Add cooked pasta. Mix well.

Notes:
1. You can use eggs instead of water if you like.
2. Vegetable purees can also be used instead of water to make colourful, healthy pasta. Use spinach/beetroot/carrot/red cabbage/bell peppers/toamato puree to make colourful pasta for your kids.
3. Different flours can also be mixed with semolina like whole wheat flour, ragi flour, soybean flour to make it more nutritious.
4. Chopped and cooked veggies such as green beans, carrots, green peas can be added in the red sauce along with the pasta.
5. You can add cruched garlic, ginger or herbs when making pasta dough for additional flavour.
