Eggless/Vegan vanilla cake (no butter, no condensed milk, no curd or buttermilk)

Yeah. I know, I know. Cake is not a healthy option (definitely you can replace refined flour with whole wheat flour). But every mom wants to make this sweet treat for the apple of her eye, especially on his/her birthday. Right?


This is not my original recipe. It has been adapted from this Vegan Vanilla Cake recipe by loving it vegan. Last year I followed this recipe and made a cake for my daughter's 3rd birthday. I made few changes and it turned out great. I have tried this recipe many times. It's foolproof as well as very quick and easy. Plus, you don't need any special ingredient like condensed milk or butter or curd. It just uses staple in your kitchen.

In this recipe I have used dairy milk, but if you want to make a vegan cake, you can use vegan milk like almond milk or soy milk.


You can use this basic recipe and try different variation. You can change the flavour, make a marble cake or anything. I have also shared the recipes for Eggless Chocolate Cake and Eggless Marble Cake which are almost similar to this one.

To get a perfect texture and spongy cake, I would recommend weighing flour and sugar instead of measuring with cups. If you don't have weighing balance, just ask shopkeeper to weigh the ingredients for you. 😁 

If you want to use whole wheat flour, you will need approx 1 and 1/4 cup of milk to get the proper consistency of the batter.

You can use any neutral flavour vegetable oil like soybean or olive oil. Avoid oil that has strong taste like groundnut oil.

Use a good quality vanilla flavour. It does make a lot of difference. I used Ossoro french vanilla flavour. It's really very good essence.

I have used a 7" round baking pan and it takes 30 mins to bake the cake. If you use a pan that is smaller or larger, baking time will vary. If pan is smaller you will need to bake the cake for longer. Use a toothpick to check whether the cake is done or not. Insert toothpick in the centre of the cake and take it out. If it comes out clear then cake is baked. If it has batter on it, then bake for some more time.

If you don't have an oven, don't worry. You can bake this cake in pressure cooker too. Spread some salt in pressure cooker, it should evenly cover the cooker bottom. Place a metal ring in the cooker so that the cake pan is sufficiently above the salt layer. Heat the cooker on large flame. Remove the gasket and the whistle and close the lid. Allow to heat it for 10 mins. Then reduce the flame to medium. Now again, the burners of the different gas stoves are different in size. So just adjust accordingly.

Ingredients:

  • 1 & 3/4 cup refined flour (220 gm)
  • 1 cup granulated sugar (200 gm)
  • 2 tbsp corn flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup milk
  • 2 tsp vanilla essence
  • 1/3 cup vegetable oil
  • 1 tbsp vinegar or lemon juice


Procedure:

  1. Preheat oven to 180℃.
  2. Grease your cake mould. Brush little oil or butter to the inside of the mould. Sprinkle some refined flour and spread it evenly by shaking and rotating the mould. Make sure the the sides are also coated well with the flour. Invert the pan and remove excess flour. Keep the greased cake tin aside.
  3. Grind sugar into fine powder
  4. In a large bowl, add flour, corn flour, powdered sugar, baking soda and salt. (When adding soda and salt, don't just dump them into the flour. Instead sprinkle evenly so that they will be mixed evenly.) With a spoon or a whisk, mix the dry ingredients well.
  5. Sift the dry ingredients into a large mixing bowl.
  6. Add milk, vanilla essence, oil and vinegar/lemon juice. Mix just to incorporate everything well. Do not overmix.
  7. Add this batter to the greased tin and bake in preheated oven for 30 min.
